The fruit are grown under the Cape Town wine of origin region.
This fruit are hand-picked in 2 stages and from 2 sections of the block planted. Resulting in 2 different ripeness levels ensuring freshness expected from Sauvignon Blanc and fullness that is not the norm with Sauvignon Blanc.
Fruit are hand-sorted and destemmed using dry ice as protection to preserve the purity of fruit that is expected. High natural acidity and very cold temperatures results in successful juice settling overnight. Clean juice are separated the next day and a bigger % are fermented with a pure yeast culture. The balance are barrel fermented and stirred on a regular basis after fermentation.
Blending of the different batches is done in April and bottled in July.
Zesty and fresh, flowed by a fusion of figs and passion fruit aromas.
The palate entrance is crisp, clean and concentrated. The Sauvignon Blanc has great balance between fruit expression, lovely depth of character, zesty acidity with a fullness of palate to cut through the crisp acidity. A beautiful example of a Sauvignon Blanc from the cool climate region in South Africa.

The Sauvignon Blanc 2019 will be a great companion to sushi especially salmon or any seafood dish.
The Sauvignon Blanc 2019 is beautiful at present. The zesty acidity and depth of palate with the fullness on after palate suggest that our Sauvignon Blanc exhibits great aging potential up to 4-5 years.
