Crystallum Ferrum Chardonnay

Ferrum Chardonnay is made from a single vineyard on Crystallum’s own land at Shaw’s Mountain, just outside the Hemel-en-Aarde region near Hermanus.

Latest release (2022)

Another lean and focused expression has added complexity this year with greengage, cardamom biscuits, buttered toast and lime curd on the palate, supported by a crunchy Grannysmith apple skin texture. The wet stone freshness and light flinty smoke is retained from the previous vintage but takes a moment longer to reveal itself. A taut and coiled vintage that will age beyond 2035.

Vinification

The wine was whole-bunch pressed with no enzymes, sulphites added at pressing. After an overnight rough-settling, the juice was sent to barrel, with a spontaneous fermentation and ageing taking place over 10 months in 300 and 500-litre barrels, 20% of which were were new oak.
