Cool-climate Chardonnay from the Hemel-en-Aarde Ridge in Walker Bay, recognized for its steely tension, refined quality, and complex, savory profile of flavors like blanched almond, salted olive, and citrus, along with a long, mineral finish. The wine is hand-harvested, whole-bunch pressed, and fermented in a mix of second-fill and new-fill French oak barrels before an extended period on its lees, with 100% malolactic fermentation, to integrate the wood and build complexity.
