The grapes are kept whole bunch and spontaneous fermentation takes place, left for 28 days skin maceration before pressing with an old school wooden basket press.
The Grenache Blanc then spends a further 9 months in old oak before filtration (not so keen on the floaters seen in a lot of orange wines) and finally bottling.
This wine packs a ton of flavour and texture, but remains fresh and tight.
