Miles Mossop Kika
WINEMAKING NOTES: This is a Noble Late Harvest made from 100% Chenin blanc.
We picked four times between the 26 th March and 23 rd April. Picking only bunches which are perfectly infected with Noble Rot and those with raisins. The grapes were picked at sugars of between 38- and 50-degrees brix and acidities of between 6.5 and 9.8 g/l.
The grapes were delivered to the winery and put directly into cold storage overnight to drop the temperature of the grapes down to around 4 degrees Celsius. The grapes were crushed whole bunch into bins for a four day cold soak after which they were pressed to 400L old French oak barrels where they fermentation took place. The fermentation stopped naturally at a perfect balance of sweetness, acidity and alcohol.
The wine was bottled in September 2019.
COLOUR: The wine has a stunning rich golden colour.
NOSE: Rich aromas of quince jelly, dried apricots, ginger and honey emanate from the glass.
PALATE: The entry on the palate is crisp with notes of marmalade, quince and ginger snap. The mid-palate and finish are textured and rich with a stunning dry grip leading to a long finish. The wine is perfectly balanced between acidity, alcohol and sugar which results in a clean fresh finish.
FOOD PAIRING: Fresh pan seared Foie Gras or Duck liver pâté served on Crostini and a herb salad; or served with a dessert of crepes and a citrus syrup; or ripe hard cheese and nuts.
MATURATION: To be enjoyed immediately after release but will benefit with cellaring for up to 10 years from harvest.
