Miles Mossop Chapter Three Chenin Blanc
STELLENBOSCH CHENIN BLANC
WINEMAKING NOTE: This is a 100% Chenin blanc from a single 35-year-old bush vine vineyard in the Stellenbosch region growing on slate soils.
The grapes were harvested at around 22,1 brix on the 11 th February. The grapes were picked into small grape crates and placed in a cold store overnight. The grapes were whole bunch pressed and the next day the settled juice was taken to 400L old French oak barrels for fermentation. The fermentation is allowed to start naturally and once completed the wine is topped and matured sur-lie for 9 months with regular lees stirring.

COLOUR: This wine has a vibrant deep straw colour.
NOSE: This wine has beautiful perfumed lemon blossom and lemon drop notes, with fresh white peach and hints of toasted almonds and vanilla in the background.
PALATE: The wine enters the palate with zesty grapefruit, white peach, preserved lemon and vibrancy. This all leads to a surprisingly rich mid-palate and pithy texture towards the finish. The finish is vibrant, fresh and lingering.
FOOD PAIRING: This wine is a perfect accompaniment to grilled fish, and chicken dishes.
MATURATION: This wine drinks well on release but will reward with cellaring for up to 10 years from harvest.
