Iona One Man Band White
The Sauvignon Blanc component (50%) was selected from three different vineyards – Block D2, Baker Vineyard and Block F4. The soils consist of Table Mountain Sandstone, giving delicacy and intense, concentrated fruit flavours. The blocks consist of two different clones, 316 and 259.
The Sémillon component (50%) comes from a single block on the farm, planted with clone GD315 on Table Mountain Sandstone, but with more clay content, giving the wine texture, weight and depth.
Lovely pure fruit, elegant and vibrant. Floral with white stone fruit and blackcurrant. Tangerine lingers on the mid palate with a long savoury finish of pea shoots, fine herbs and sea breeze. Complex, layered, classic and poised.
Both the Sauvignon Blanc and Sémillon grapes were hand-picked and whole bunch pressed. The juice settled for between 8-12 hours, before it was racked to 500L French oak barrels (2nd, 3rd and 4th fill). Fermentation was spontaneous and the temperature was kept between 18-22°C.
The wine was aged for 11months in barrel, before it was racked and bottled. The wine was not fined, and lightly filtered before being bottled.
