Crystallum Ferrum Chardonnay
The maiden vintage of Ferrum Chardonnay was made from a single vineyard on Crystallum’s own land at Shaw’s Mountain, just outside the Hemel-en-Aarde region near Hermanus.
Latest release (2020)
The nose shows quince, litchi, lemon curd and a light, peaty smoke. A full and textured palate with honeycomb and winter melon is lent freshness and complexity by lime leaf and lemon thyme savouriness while the ample mid palate leads into a lengthy, pithy finish.
The wine was whole-bunch pressed with no enzymes, sulphites added at pressing. After an overnight rough-settling, the juice was sent to barrel, with a spontaneous fermentation and ageing taking place over 10 months in 300 and 500-litre barrels, 20% of which were were new oak.
